Winkle and seaweed soup
1. Peel and finely chop the onion and garlic

Ingredients
- 1 small onion
- 2 cloves garlic
- 1 carrot (optional)
- 2 tbsp oil
- 1 handful winkles
- 1 handful new shoots of knotted wrack/bladderwrack/serrated wrack
- 2 dl water
- 2 dl coconut milk or cream
- 1 pinch seaweed salt (wrack and kelp salt)
- salt and pepper
- Cocktail sticks for picking out the winkles

How to do it
- Peel and finely chop the onion and garlic
- Rinse the winkles well in salt water to remove sand and grit
- Fry the onion and garlic in oil or butter until translucent
- Fry the seaweed a little together with the onion
- Add the water and cream and bring to the boil
- Add the winkles and cook for 4-5 minutes
- Season to taste with seaweed salt and pepper
- Serve with good bread you can dip in the soup
