Winkle and seaweed soup

Ingredients

  • 1 small onion
  • 2 cloves garlic
  • 1 carrot (optional)
  • 2 tbsp oil
  • 1 handful winkles
  • 1 handful new shoots of knotted wrack/bladderwrack/serrated wrack
  • 2 dl water
  • 2 dl coconut milk or cream
  • 1 pinch seaweed salt (wrack and kelp salt)
  • salt and pepper
  • Cocktail sticks for picking out the winkles

How to do it

  1. Peel and finely chop the onion and garlic
  2. Rinse the winkles well in salt water to remove sand and grit
  3. Fry the onion and garlic in oil or butter until translucent
  4. Fry the seaweed a little together with the onion
  5. Add the water and cream and bring to the boil
  6. Add the winkles and cook for 4-5 minutes
  7. Season to taste with seaweed salt and pepper
  8. Serve with good bread you can dip in the soup
