How to do it
- Get the campfire going and let it burn for about 15 minutes.
- Cut the chicken breasts into pieces and chop all the vegetables.
- Fry the chicken in a little oil, sprinkle over a little salt and pepper, and set aside.
- Cook the egg noodles as directed on the packet, and set aside.
- Fry the onion, garlic and chilli with the curry powder and turmeric. Add the rest of the vegetables and let them sizzle for about 2 minutes.
- Pour over the coconut milk and let it simmer until the sauce becomes rich and thick.
- Season to taste with salt, pepper and lime juice, then add the chicken and egg noodles. Let everything heat through.
Tips:
- Use whatever vegetables you have — plenty of them suit a wok.
- As an alternative to chicken, you can use pork or chickpeas.
- Serve with rice instead of egg noodles, if you prefer.
