Campfire wok

Chop all the vegetables at home, before you set off. Alternatively, buy a ready-made wok mix.

Ingredients

  • 800 grams chicken breast
  • 6 cloves garlic, finely chopped
  • 1 red chilli
  • 2 onions
  • 6 tbsp curry powder
  • 4 tsp turmeric
  • 1 red pepper
  • 1 head of broccoli
  • 2 carrots
  • 4 tins coconut milk (400 ml)
  • 1 lime
  • 2 packets egg noodles
  • 2 dl oil

How to do it

  1. Get the campfire going and let it burn for about 15 minutes.
  2. Cut the chicken breasts into pieces and chop all the vegetables.
  3. Fry the chicken in a little oil, sprinkle over a little salt and pepper, and set aside.
  4. Cook the egg noodles as directed on the packet, and set aside.
  5. Fry the onion, garlic and chilli with the curry powder and turmeric. Add the rest of the vegetables and let them sizzle for about 2 minutes.
  6. Pour over the coconut milk and let it simmer until the sauce becomes rich and thick.
  7. Season to taste with salt, pepper and lime juice, then add the chicken and egg noodles. Let everything heat through.

Tips:

  • Use whatever vegetables you have — plenty of them suit a wok.
  • As an alternative to chicken, you can use pork or chickpeas.
  • Serve with rice instead of egg noodles, if you prefer.
