Nettle soup

1. Wear gloves when you handle the nettle leaves. Rinse the leaves in cold water.

Ingredients

  • 1 small onion
  • 2 cloves of garlic
  • 2 tbsp butter
  • 1 litre nettle leaves. Use young shoots/leaves; nettles grow quickly and can turn stringy and bitter.
  • 6 dl mild chicken stock/bouillon
  • 1 dl cream
  • salt, ground pepper and grated nutmeg

How to make it

  1. Wear gloves when you handle the nettle leaves. Rinse the leaves in cold water.
  2. Sweat the onion and garlic in butter in a saucepan.
  3. Stir in the leaves once the onion has turned glossy and tender. Continue to sweat, stirring, until the leaves have collapsed.
  4. Add the chicken stock, bring to the boil and simmer the soup for 5-10 minutes.
  5. Blend the soup smooth with a hand blender.
  6. Add the cream, bring the soup back to the boil and season to taste with salt, pepper and grated nutmeg.
