Nettle soup
1. Wear gloves when you handle the nettle leaves. Rinse the leaves in cold water.

Ingredients
- 1 small onion
- 2 cloves of garlic
- 2 tbsp butter
- 1 litre nettle leaves. Use young shoots/leaves; nettles grow quickly and can turn stringy and bitter.
- 6 dl mild chicken stock/bouillon
- 1 dl cream
- salt, ground pepper and grated nutmeg

How to make it
- Wear gloves when you handle the nettle leaves. Rinse the leaves in cold water.
- Sweat the onion and garlic in butter in a saucepan.
- Stir in the leaves once the onion has turned glossy and tender. Continue to sweat, stirring, until the leaves have collapsed.
- Add the chicken stock, bring to the boil and simmer the soup for 5-10 minutes.
- Blend the soup smooth with a hand blender.
- Add the cream, bring the soup back to the boil and season to taste with salt, pepper and grated nutmeg.
