Creamed Chanterelles

1. Brush the chanterelles and cut the largest ones into slightly smaller pieces.

Ingredients

  • 150 g chanterelles
  • 2 dl cream
  • 4 slices Parma ham
  • 0.5 onion
  • 1 tsp salt
  • 0.5 tsp pepper
  • 1 handful fresh thyme

How to do it

  1. Brush the chanterelles and cut the largest ones into slightly smaller pieces.
  2. Heat a frying pan over medium-high heat. Put the chanterelles in the pan and leave them for a couple of minutes. Shake the pan gently.
  3. Cut the Parma ham and onion into small pieces, and add them to the pan along with the chanterelles. Fry until the chanterelles turn dry.
  4. Pour over the cream, salt, pepper and thyme, and let it simmer over low heat until the cream has cooked in.
