Tags: Foraging for wild food (matauk), Mushrooms Description: The winter chanterelle can have various shades of brown depending on how damp its growing site is. It is recognised by a hole at the top, a hollow stem and ribs on the underside of the cap. The winter chanterelle and https://soppognyttevekster.no/normlisten/kantarell/ are ribbed mushrooms and easy to recognise once you have learnt them. Once you have found one, there are usually more nearby. These make good beginner’s mushrooms. Use: Good fried in butter. In soup, fricassees, or dried as a flavour enhancer. Goes well in casseroles. Habitat type: Forest Edible: Yes Equipment: • Something to put the mushrooms in ◦ A mushroom basket, a stiff paper bag with room for several boxes • Separate the mushrooms you know from the ones you are unsure of. ◦ You can use the plastic tubs that grapes and stone fruit come in. Put different mushrooms in different tubs. • A knife ◦ One of the small paring knives from the kitchen is fine. • A brush ◦ A toothbrush or a small paintbrush, for example. • A mushroom book ◦ You can also drop by the Soppkontrollen (mushroom inspection) and ask for a copy of the brochure https://drive.google.com/file/d/1OpmkNhLq7UpE0fRVeacO5qAEnZUpiKVl/view. Sustainable gathering: – Cut or pinch off the stem – never pull up the root. – Leave some mushrooms behind. Written by: Gina Wigestrand, Eteutehilde
