It is recognised by a hole at the top, a hollow stem and ribs on the underside of the cap. Once you have found one, there are usually more nearby. These make good beginner’s mushrooms. Use: Good fried in butter. In soup, fricassees, or dried as a flavour enhancer. Goes well in casseroles.
