Tags: Foraging for wild food (matauk), Mushrooms Description: The cep has a brown cap and a thick, sturdy stem. The pore layer beneath the cap is white in young mushrooms, greenish-yellow in older ones. The stem itself always has a fine, white mesh-like net at the top. This is a sure identifying mark for the species (Høiland, 2021). See the photos for a closer description. The cep grows in deciduous and coniferous forest, and can be found as early as June, but is most common from July to September. The cep is a relatively safe edible mushroom. Species it can be confused with are various scaber-stalk boletes and the http://snl.no/galler%C3%B8rsopp. Scaber-stalk boletes must be heat-treated for at least 15 minutes to be edible. The bitter bolete is not http://snl.no/giftige_sopper, but tastes bitter and is useless as an edible mushroom (Høiland, 2021). Use: Very well suited to drying. Can also be ground into powder as a flavour enhancer. Habitat type: Forest Edible: Yes Equipment: • Something to put the mushrooms in ◦ A mushroom basket, a stiff paper bag with room for several containers • Separate the mushrooms you know from those you are unsure about. ◦ You can use the kind of plastic punnets that grapes and stone fruit come in. Put different mushrooms in different punnets. • A knife ◦ One of the small paring knives from the kitchen is fine. • A brush ◦ For example a toothbrush or a small paintbrush. • A mushroom guide ◦ You can also drop by the mushroom inspection (Soppkontrollen) and ask for a copy of the brochure https://drive.google.com/file/d/1OpmkNhLq7UpE0fRVeacO5qAEnZUpiKVl/view. Sustainable gathering: - Cut off the stem – never pull up the root.
- Leave some mushrooms behind. Written by: Gina Wigestrand
