1. Toast the pine nuts in a dry frying pan until nicely golden. This brings out even more flavour.

Ingredients

  • 200 g ramsons
  • 2 dl pine nuts
  • 50 g parmesan, in pieces
  • 2 tsp salt
  • 4 dl olive oil
  • the juice of 1 lime

How to do it

  1. Toast the pine nuts in a dry frying pan until nicely golden. This brings out even more flavour.
  2. Put the ramsons, pine nuts, parmesan and salt in a food processor.
  3. Add the lime juice and oil in a thin stream while the processor runs. The pesto is ready when everything is nicely combined.
