You also find it along roadsides, on waste ground, in utmark, forest and on the mountains. The plants have a long, coarse root, yellow flower heads and a hollow stem filled with a bitter, white milky sap. Use: The whole plant is edible. (Vitamin A, B, C and D, potassium, calcium, iron) You can use: • young leaves like rocket • the stem can be shredded, put in cold water and used in a salad, or boiled like pasta • flower buds fried in a little butter or oil • flower petals scattered over the salad, • the root, washed and boiled, in the same way as carrot Habitat type: cultural landscape Edible: Yes Written by: Eteutehilde
